Demre's Blue Crab Recipe
Blue crabs are a culinary highlight in Demre, Turkey, especially in the Göksu River area. A popular local method of preparing them involves steaming the crabs and then dressing them with a garlic-lemon sauce. Here's a traditional recipe you can try:
Ingredients:
- Fresh blue crabs
- Olive oil
- Garlic cloves, crushed
- Freshly squeezed lemon juice
Instructions:
Clean the Crabs: Remove the shells from the upper back of the crabs and clean them thoroughly.
Initial Cooking: Place the cleaned crabs in a deep pot. Cover the pot and cook over low heat until the crabs turn red.
Add Olive Oil: Once the crabs have turned red, drizzle olive oil over them. Continue to cook on low heat for an additional 5-6 minutes.
Prepare the Sauce: In a separate bowl, mix the crushed garlic with freshly squeezed lemon juice to create a sauce.
Serve: Remove the crabs from the pot and pour the garlic-lemon sauce over them. Serve immediately.
